Vegan Matzo Cake With Just 3 Ingredients

3-Ingredient Vegan Matzo Cake

Spring is finally here, and my feed is full of Passover recipes. I love this time of year.

Amir's mom used to make this vegan matzo cake every year for the Seder, the traditional Passover dinner.

There's nothing fancy or complicated about it. Make it with the kids, or pull it together when you need a quick vegan dessert for Passover and your guests are practically at the door.

Just leave time for it to set in the fridge—about two hours. That's it. Sometimes even less.

This cake is almost laughably simple, but it's hard to stop eating. You get the crunch of matzo and all that rich, creamy chocolate in every bite.

Sadly, I don't have great news on the calories, fat, or sugar front. This cake is rich in all three. We're allowed a holiday treat, right?

On the bright side, everyone will love it so much that you won't have a crumb left.

That counts for something, doesn't it?

A Few Recipe Notes

I used basic dark chocolate, but you can swap in any vegan chocolate you like, including the white chocolate from this recipe or vegan "milk" chocolate.

I used tahini made from hulled sesame seeds rather than whole-seed tahini. The whole-seed kind has a stronger flavor that can overpower the chocolate.

If you'd rather skip the tahini, replace it with the same amount of almond butter or smooth peanut butter. You'll get a similar rich flavor and creamy texture.

You can also replace the matzo with vegan wine cookies (sweet cookies traditionally served at Passover) or another cookie you like. Or leave it out altogether and make some wonderful chocolate truffles.

I used a glass Pyrex baking dish, but a springform pan works too. You could even use small muffin pans for individual desserts.

A quick tip:

If you'd like to enjoy the cake while keeping your calorie intake in check, cut it into 40 slices.

That gives you a small slice with 140 calories.

Trust me: this cake is so dense and rich that even a small piece will satisfy your holiday sweet tooth.

Ingredients

  • 600 g (21 oz) dark chocolate
  • 300 g (10.6 oz) tahini 1 cup

Instructions

  1. Melt the chocolate in the microwave. 

  2. Add the tahini and stir thoroughly. 

  3. Arrange a layer of matzo on the bottom of a baking dish. 

  4. Pour a little of the chocolate-tahini mixture over the matzo. 

  5. Add another layer of matzo, followed by another layer of chocolate mixture. Keep alternating until you've used all the chocolate mixture.

  6. Use a spatula to gently press the matzo down into the chocolate, then refrigerate for at least two hours.

  7. Slice the cake and serve.
