These crunchy peanut butter bites are quick, easy, and just 40 calories each. They're vegan, too—and you won't need to turn on the oven.

Ingredients

  • 2 cups unsweetened puffed rice cereal
  • 2 tablespoons natural peanut butter with no added sugar
  • 3 tablespoons zero-calorie maple syrup
  • 1 tablespoon good-quality cocoa powder
  • A pinch of Atlantic sea salt
  • For drizzling: a little peanut butter mixed with a drop of oil

Instructions

  1. In a microwave-safe bowl (or a small saucepan), heat the peanut butter and maple syrup until smooth and pourable.
  2. Add the cocoa powder and salt, then stir well until you have a rich, chocolatey mixture.
  3. Gently fold in the puffed rice until every piece is coated.
  4. With damp hands, shape the mixture into 8 small balls. Place them on parchment paper and flatten into disks.
  5. In a small bowl, mix a little peanut butter with a drop of oil. Drizzle thin stripes over each disk.
  6. Freeze for 45 minutes, until fully set.

Tips

Let the bites thaw on the counter for a few minutes before eating. Store them in the freezer and grab one whenever a craving hits.
