This high-protein vegan tahini bread comes together in the microwave in minutes. Silken tofu keeps it moist and fluffy, with no gluten or eggs.
Ingredients
- 2 tablespoons tahini (preferably whole sesame tahini)
- 3 tablespoons silken tofu (soft or silken texture)
- 2 heaping tablespoons red lentil flour (or another legume flour)
- 1/2 teaspoon psyllium husk
- 1/2 teaspoon baking powder
- Pinch of salt
- Optional: 1–2 tablespoons water (only if the batter is seriously thick)
Instructions
- In a small microwave-safe bowl, stir the tahini and tofu together until smooth and creamy.
- Add the dry ingredients and mix well.
- Let the batter rest for 1 minute so the psyllium can absorb the liquid.
- Microwave for 90 seconds, until the top is dry.
- Remove the bread from the bowl, let it set for 2 minutes, then slice.
Tips
For a crisp crust, pop the slices into a toaster or skillet for 1 minute.
