These vegan yuba sloppy joes are made with crumbled yuba (soy milk skin) simmered in a rich, well-seasoned tomato sauce. Pile the filling onto a soft bun for a deliciously messy meal.

Ingredients

  • 1 full package of yuba wings, or any other shape
  • 1 large onion, chopped
  • Olive oil
  • 1 teaspoon sweet paprika
  • 1 tablespoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon curry powder
  • 2 cloves garlic, crushed
  • Salt, to taste
  • 1 teaspoon cocoa powder (optional)
  • 2 tablespoons soy sauce
  • 1 teaspoon sugar
  • 1 can crushed tomatoes
  • 1 heaping tablespoon tomato paste
  • 1.5–2 cups water
  • Bay leaves

Instructions

  1. Prep the yuba: Pulse the yuba in a blender until it breaks into crumbles of varying sizes.
  2. Build the flavor: In a large pot, sauté the onion in olive oil until golden. Add the sweet paprika, smoked paprika, cumin, curry powder, garlic, salt, cocoa powder if using, soy sauce, and sugar. Cook, stirring, for about 1 minute.
  3. Make the sauce: Add the crushed tomatoes, tomato paste, and 1.5–2 cups water. Bring to a boil.
  4. Finish: Add the bay leaves and yuba crumbles. Reduce the heat to low and simmer for about 15 more minutes, until the yuba is tender and the sauce has thickened.
