These crunchy peanut butter bites are quick, easy, and just 40 calories each. They're vegan, too—and you won't need to turn on the oven.
Ingredients
- 2 cups unsweetened puffed rice cereal
- 2 tablespoons natural peanut butter with no added sugar
- 3 tablespoons zero-calorie maple syrup
- 1 tablespoon good-quality cocoa powder
- A pinch of Atlantic sea salt
- For drizzling: a little peanut butter mixed with a drop of oil
Instructions
- In a microwave-safe bowl (or a small saucepan), heat the peanut butter and maple syrup until smooth and pourable.
- Add the cocoa powder and salt, then stir well until you have a rich, chocolatey mixture.
- Gently fold in the puffed rice until every piece is coated.
- With damp hands, shape the mixture into 8 small balls. Place them on parchment paper and flatten into disks.
- In a small bowl, mix a little peanut butter with a drop of oil. Drizzle thin stripes over each disk.
- Freeze for 45 minutes, until fully set.
