Air Fryer Sweet Potato and Carrot Fritters

A healthy, tasty snack that doesn't need a deep fryer! These air fryer sweet potato and carrot fritters are high in fiber and low in calories.

Ingredients

  • 1 medium sweet potato, grated
  • 1 carrot, grated
  • 2 tablespoons chickpea flour
  • 1 tablespoon psyllium husk (the healthy “glue”)
  • Seasonings: salt, pepper, garlic powder, and a little paprika
  • A little olive oil for brushing or spraying

Directions

  1. Mix all the ingredients in a bowl until evenly combined.
  2. Use your hands to shape the mixture into flat patties.
  3. Arrange in the air fryer basket and brush or spray the tops with a little olive oil.
  4. Air-fry at 180–190°C (355–375°F) for 12–15 minutes, carefully flipping halfway through.

Tips

  • The chickpea flour adds protein, and the psyllium holds the fritters together without eggs or all-purpose flour.
  • These fritters are gluten-free, high in fiber, and low on the glycemic index.

  • Entire batch: about 280 calories
  • When divided into 8 fritters: about 35 calories per fritter
