A healthy, tasty snack that doesn't need a deep fryer! These air fryer sweet potato and carrot fritters are high in fiber and low in calories.

Ingredients
- 1 medium sweet potato, grated
- 1 carrot, grated
- 2 tablespoons chickpea flour
- 1 tablespoon psyllium husk (the healthy “glue”)
- Seasonings: salt, pepper, garlic powder, and a little paprika
- A little olive oil for brushing or spraying
Directions
- Mix all the ingredients in a bowl until evenly combined.
- Use your hands to shape the mixture into flat patties.
- Arrange in the air fryer basket and brush or spray the tops with a little olive oil.
- Air-fry at 180–190°C (355–375°F) for 12–15 minutes, carefully flipping halfway through.
Tips
- The chickpea flour adds protein, and the psyllium holds the fritters together without eggs or all-purpose flour.
- These fritters are gluten-free, high in fiber, and low on the glycemic index.
