Ingredients
- 1 package firm tofu, 300 g (10.6 oz), well drained and pressed
- 2 heaping tablespoons psyllium husk
- Salt, garlic powder, and a pinch of turmeric
- For coating: olive oil and za’atar
Instructions
- Blend all the dough ingredients in a blender until smooth, with a Play-Doh-like texture.
- Let the dough rest for 10 minutes—this is key to helping it hold together.
- Shape into 8 small pitas and flatten them.
- Brush with olive oil and sprinkle with za’atar, then place in a panini press lined with parchment paper.
- Close the press and cook for about 10 minutes, until the pitas are firm and browned.

- Don’t skip the resting time—the psyllium needs time to absorb moisture.
