Ingredients

  • 1 package firm tofu, 300 g (10.6 oz), well drained and pressed
  • 2 heaping tablespoons psyllium husk
  • Salt, garlic powder, and a pinch of turmeric
  • For coating: olive oil and za’atar

Instructions

  1. Blend all the dough ingredients in a blender until smooth, with a Play-Doh-like texture.
  2. Let the dough rest for 10 minutes—this is key to helping it hold together.
  3. Shape into 8 small pitas and flatten them.
  4. Brush with olive oil and sprinkle with za’atar, then place in a panini press lined with parchment paper.
  5. Close the press and cook for about 10 minutes, until the pitas are firm and browned.

Tips

  • Don’t skip the resting time—the psyllium needs time to absorb moisture.
