Yes, it has tofu in it.

No, you can’t taste the tofu. At all.

No, regular tofu won’t work.

You can find silken tofu at health food stores and in the organic section of supermarkets.

Great. Now that we’ve cleared that up, let’s get started.

I don’t call this the world’s best chocolate mousse for nothing. I really do think it earns the title.

Picture a rich, creamy mousse with an extra-big hit of chocolate.

If you eat legumes during Passover (the Jewish holiday with special dietary rules), this is your mousse.

You can make it right before serving or refrigerate it for an even firmer texture.

I also think it would make a wonderful base for a cake. 

Silken tofu can blend with a generous amount of chocolate and still keep that wonderful texture, while bringing some nutrition to the party, too.

No, this isn’t a low-calorie recipe by any stretch. But there’s absolutely room to dig into a chocolate mousse like this every now and then when the craving hits. Who’s with me?

A Little About the World’s Best Chocolate Mousse

As I mentioned at the start of the post, silken tofu is the base of this recipe.

Silken tofu retains more water during production than the regular tofu you’re probably familiar with.

That gives it a panna cotta-like texture and fewer calories thanks to its higher water content.

In Israel, I’ve found silken tofu from 2 companies. One is Unicurd (a tofu brand sold in Israel), found in the refrigerated section. Its package says "Traditional Japanese-style soft tofu" and "Yokko Tofu."

The other is from Pacific Nutritional Foods Inc. (another tofu supplier available in Israel). It comes in shelf-stable packaging, so it’s usually not refrigerated, and the package says "silken tofu."

Both come in soft and firmer varieties, but both versions are very soft compared with regular tofu. Honestly, I still haven’t quite figured out the difference between the soft and firm ones. To me, they’re both very soft and perfect for this recipe.

You can’t make this recipe with regular tofu. It just isn’t the same.

I used 300 g (10.6 oz) of dark chocolate in this recipe.

If you’d like, you can reduce the chocolate by up to 2/3, down to 100 g (3.5 oz). The mousse will be less sweet and less decadent, but I still think it’s delicious.

For a little extra flavor, I added cinnamon and cardamom. You can leave them out or swap in flavors you love, like chili, mint, or a little orange juice. Go wild. You might just make something delicious.

The maple syrup adds a little extra sweetness to the tofu. Skip it if you don’t want your mousse quite so sweet.

Tip: This mousse is very rich and dense, so I’d happily divide it into 6 smaller servings. Each will have half the calories.

Ingredients

  • 300 g (10.6 oz) silken tofu
  • 300 g (10.6 oz) dark chocolate 3 bars, 100 g (3.5 oz) each
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1 teaspoon maple syrup 6 g (0.2 oz)

Instructions

  1. Break the chocolate into small pieces and place in a bowl.

  2. Melt the chocolate in a heatproof bowl set over a pot of boiling water, or in the microwave.

  3. Add the tofu, spices, and maple syrup to a blender and blend until completely smooth.

  4. Add the melted chocolate and continue blending until the mousse is smooth and evenly mixed.

  5. Pour into serving glasses.

  6. Top with a little grated chocolate and a sprinkle of cinnamon.

  7. Store in the refrigerator for 3–4 days.
