Peanut Butter Chia Pudding

Ingredients

  • 1 tablespoon powdered peanut butter 20 g (0.7 oz)
  • 2 tablespoons chia seeds 25 g (0.9 oz)
  • 1 scant cup unsweetened soy milk 220 ml (about 7.4 fl oz)
  • 1 tablespoon natural peanut butter with no added sugar 20 g (0.7 oz)
  • 1 teaspoon cacao nibs 10 g (0.35 oz)

Instructions

  1. Add the powdered peanut butter and 1/4 cup of the soy milk to a tall jar. Stir well until smooth.

  2. Add the chia seeds and remaining soy milk, then stir well.

  3. Refrigerate the jar for at least 5 hours.

  4. The next morning, take it out of the fridge, top with the peanut butter and cacao nibs, and dig in!
